Following the delicious results of our first pomegranate cocktail, we take it up a notch with our next installment. In take two in our Pomegranate Trilogy, we wanted to spice things up a little …  and we really mean spice things up! Again, we were so lucky to have been given for FREE(!) a sizable bag ‘o’ pomegranates, it was such a steal! Given this, we think what better to use than Stolen Spiced Rum! We invite you to take a gander at our newest cocktail – What A Steal!

A new favourite: Settler’s Gin

What A Steal:

30mL Stolen Spiced Rum

30mL Settlers Rare Dry Gin

30mL Pomegranate Juice

15mL Vanilla Simple Syrup

Half a punnet of raspberries

Make your vanilla syrup by prepping a 1:1 simple syrup (equal parts water and caster sugar) then add some Bourbon Vanilla Powder. We made half a cup of vanilla syrup and used roughly a quarter of a teaspoon of powder because it is pretty strong stuff. Once your syrup is ready muddle your raspberries in the bottom of a cocktail shaker. Add your spiced rum, gin, pomegranate juice, and vanilla syrup. Shake it baby, shake it with ice. Strain into cocktail glass. Garnish with a few extra raspberries if you feel so inclined.

We have to say, we are digging the vanilla and rum combo. It’s kind of like a fruity, non-chocolatey truffle … if that makes sense! The vanilla, rum, and pomegranate give the drink a gorgeous aroma that immerses you in a plethora of spices and vanilla goodness. This drink was not as tangy and tart as our first pomegranate drink, but it was still as tasty. I think the What A Steal is much more of a rich drink and has a beautiful depth to the flavours included. Interestingly, the cocktail was not as fruity as you might expect it to be but was still suitably fruit flavoured. Really, the drink was more musky and woody rather than overly fruity and had an intriguing spicy aftertaste.

Now Serving – Milk Boss

Do you know what’s annoying? Milk. You think you’ve purchased a reasonable amount of milk, no giant 3L bottle for you, but even so you just can’t get through it before the ‘use by date’. We hate to waste food, but life (that old chestnut) has a habit of getting in the way of your milk drinking plans and screwing everything up! Next minute things are starting to smell a little bit funky and you’re trying to think back to the last time you poured milk on your cereal and whether that was before or after it went bad. This time though we were not going to be beaten by the use by date. We showed that milk who was boss by pouring it’s still-fresh ass into a cocktail shaker with some damn fine booze. And thus the Milk Boss was born.

Milk Boss :

70ml Mr Black Iced Coffee 15ml

Stolen Spiced Rum

90ml Full Cream Milk

10ml Maple Syrup

Fill a highball glass with ice. Pour 30ml of Mr Black and the maple syrup into the glass. Grab your cocktail shaker and add 30ml Mr Black, Spiced Rum and milk. Give it a hard shake then pour into glass. Top with remaining Mr Black. Serve with a straw. This is the sort of thing we’ve already made a lot of with Mr Black, but there’s a reason for that: it tastes so damn good! It’s easy to drink with a nice sweetness from the maple syrup. There’s a nice spicy smell, but not an overly spiced flavour. It’s more of a caramel combination from the spiced rum and maple syrup with just a subtle spiciness. Using the full cream milk also gives the drink a really creamy flavour. It tastes kind of like a decadent creamy coffee truffle. It’s just a little bit fancy really.

Next time your milk is about to expire show it who’s boss by slamming it down with some sweet sweet alcohol. Go on, make yo’self a Milk Boss.

P.S the only good thing about nearly being out of Mr Black Coffee Liqueur is the badass artwork on the inside of the bottle is almost completely revealed. God it looks cool.

Now Serving – Stolen Coffee

Some mornings the only thing that lets you face the day is that cup of strong black coffee. Until you get that sweet, sweet black liquid gold the struggle is real. Then you actually start working and all the joy of that morning coffee is crushed, to be replaced by the longing for that end of day cocktail. This is clearly the reason why coffee and cocktails go so well together, combining two of the strongest motivators to get through the day, and why the Stolen Coffee needs to be added to your drinking repertoire (and possibly morning routine).

60ml Stolen Spiced Rum

30ml Fresh Orange Juice

30ml Cold Brew Coffee

15ml Mr Black Coffee Liqueur

Orange peel to garnish

 

In a cocktail shaker filled with ice stir the rum, juice, cold brew, and coffee liqueur with a bar spoon till it’s nice and cold. Strain it into ice filled tumblers and then garnish with a piece of orange peel.

Stolen Coffee

Hot damn this is a morning coffee with some kick and just a bit of a twist. Think the lingering bitterness of black coffee mixed with the sweetness of fresh orange juice and a rich, caramel-y, molasses rum. You’ll be reminded of breakfast as the coffee and orange notes in the aroma mix and contend with each other. It sounds a bit weird, it did to us at first, but it’s like pairing your two favourite morning beverages in one for twice the fun (and by two favourite morning beverages we mean coffee and juice not rum…although we are always open to new suggestions). You get the orange first and then you’re left with that strong, slightly bitter aftertaste. It’s an interesting and tasty combination. What really boosts this to the next level is the Stolen Rum. It is the perfect rum for this drink because it already has those coffee notes. The rum just blends into the coffee like they were meant to be together. The molasses of the rum also just smooths out some of the bitterness of the coffee and the acidity of the juice to balance things out and make it very easy to drink.

We don’t necessarily condone morning drinking, but if we did then we would be all over Stolen Coffee as our morning recommendation and beverage of choice. Coffee, rum, and juice is some sort of holy trinity that we are all for.

Now Serving – Smokin’ Iced Tea

Lord oh mercy it has not only been damn hot this summer, but humid. It feels more like the Deep South than South Australia right about now and while The Lady and I don’t like the heat at the best of times this humidity is something else. Luckily we had plenty of tea concentrate leftover from our So French 75 that we could make the perfect drink for these hot and humid conditions, a delicious and refreshing spiked ice tea! Introducing the Smokin’ Iced Tea.

Smokin’ Iced Tea

45ml Stolen Spiced Rum

30ml French Earl Grey Tea Concentrate

Juice of Half a Lemon

Fever Tree Lemonade

Ice

Lemon peel or wedge to garnish

 

Add ice to your cocktail shaker and shake the rum, tea concentrate and lemon juice. Grab a highball glass, chuck in some ice and then pour in your boozy tea. Top with lemonade, garnish with a piece of lemon and serve with a straw.

There’s nothing too fancy about this drink but boy did it hit the spot. It’s cool and refreshing with nice caramel and spice flavours from the rum, sweetness and herbal flavours from the tea, and a satisfyingly sharp tang from the lemon and lemonade. All of these different flavours given the drink an enticing aroma. You can play around with the measurements as well if your tastes lean more towards the rum, tea, or lemon. We think this mix provides the right balance though and we recommend Stolen Spiced Rum or something with similar coffee and tobacco flavours as it provides great flavour to the drink. Either way this is an easy drinking ice tea, almost a little too easy to drink. You’ll knock it back in no time and be wondering where the next is. It would be perfect mixed up in a big pitcher so you could just while away the afternoon, not doing anything but escaping the heat and humidity. Just make sure you’ve got plenty of ice, a comfortable chair, and a book to keep you company.

Given we’re experiencing weather more common to the Deep South than South Australia lately it makes sense to imbibe in a bit of Southern hospitality. The Smokin’ Iced Tea is quick and easy to prepare, perfect for a hot and humid day where you don’t really want to do anything. Just sit back, relax and try not to overdo it ya hear.

Out & About – Loft Oyster & Wine Bar Take Two

Sometimes when you’ve struck a good thing it’s best not to mess with it. The last time we went to Gouger Street’s Loft Oyster & Wine Bar we had just finished an intense period of university study. You know that time of year when every deadline feels like it’s on the same day and you find yourself forgetting what sunlight or normal sleeping patterns are like as you madly rush to get everything done. Yeah, good times. Well, that wonderful time of yeah came again, but we’re through to the other side now and everything is coming up Milhouse! So, in the mood to celebrate, we decided to head back to Gouger Street and sample some more delicious cocktails from the Loft.

While we were at the Loft to celebrate it was also a bit of a last hurrah for the current cocktail menu. The Loft has a classic cocktail menu and a rotating menu of new specialties and we tip our hat to the Loft Twitter handler for giving us the heads up on the upcoming menu change so we could sneak in a taste before it changes. From the specialties we tried the White Rabbit, the Cold Drip Negroni, and the Bangkok Breakfast and we also went for the classic Orange Daisy.

As soon as The Lady saw the White Rabbit she knew I was going to order it. It was a mix of brown butter washed dark rum, smoked maple syrup, orange and lemon juice. Brown butter and smoky maple syrup? Sign me up! The drink was surprisingly very citrus forward at first. You got a lot of orange aroma and sweet fruit flavour. About halfway through the drink though you get hit with the smoky maple flavour and aroma. It was a really delicious transition of flavours that was topped off with a smooth spiciness from the butter washed rum and a definite lingering citrus tang. An intriguing and easy to drink cocktail.

As much as I was tempted by the White Rabbit I also had a strong suspicion The Lady would choose the latest Coffee Experiment, the Cold Drip Negroni. Gin and coffee are two of The Lady’s favourite things and she rarely misses an opportunity to combine the two. Throw in some Campari and sweet vermouth and you’ve got a really good time. The coffee and Campari pair excellently to provide a delightful bitterness and who can resist the heavenly aroma of coffee tinged with citrusy orange. Plus, we were rather impressed by the massive hunk of ice used to chill the drink (yes when you drink a lot of cocktails ice size becomes an important thing). It was both practical, keeping the drink cool but not diluted, and looked rather nice, sticking out the top of the glass. One for all the coffee lovers.

The other two cocktails caught our eye not only because they sounded amazing, but because they offered both a regular and a small size. It’s not that we didn’t think we could drink a whole other cocktail (trust us, we most certainly could), we just appreciated the option of a slightly cheaper option. We’re more than happy to pay what a good cocktail is worth. We’re also poor students so the option to try something that sounds so nice for a bit cheaper price is definitely quite attractive to us. The Bangkok Breakfast was served in a cute little milk bottle with a straw. It mixed citrus vodka, breakfast tea, lime, ginger, and lemongrass. The drink wasn’t as citrusy as we thought it would be. Instead the ginger was really dominate and had a really pleasant spiciness that left a nice tingly sensation on your tongue. To us it screamed hot summer’s day as it was refreshing and easy to drink. The Orange Daisy was also quite a good accompaniment to the Bangkok Breakfast. It was similarly refreshing and tasted kind of like an alcoholic soft drink. The orange and cardamom cordial was not too syrupy or too sweet. It was delightfully balanced and again we loved the citrus flavours, mixed something a little bit different. Without even realising we went through a bit of a citrus cocktail tasting, but we’re okay with that when the results are so good.

This was our second visit to the Loft after struggling through study hell and we’re starting to feel like this is the start of a great tradition. As long as they keep making cocktails as good as these those long nights of study may just be worth it. Good cocktails are always the best motivation.

Out & About – Bank Street Social

Over the weekend, The Gentleman and I were invited out to the new and trendy West End bar Bank Street Social. I was intrigued to try out this little place, mainly because I heard that in the process of fitting our their venue, the owners of the bar, as well as their kind friends and family carried around 7000 bricks down the stairs to the basement space in order to finish the gorgeous exposed brick wall. Let me tell you right now, their effort was worth it. This wall is pretty gosh darn impressive. The interiors remind me of an old fashioned, almost secret and hidden bar. The space is also surprisingly large, the bar is hidden downstairs and you expect to walk down into a cramped little space, but it’s quite an open and long bar that didn’t get too cramped even on a busy Saturday night. We also felt very hip and trendy being in Bank Street Social, which I think goes hand in hand with the feeling of exclusivity and old school hidden bar charm! Being inside this gorgeous space, you would never guess that there is an array of fast-food establishments surrounding the entrance. However, I imagine these joints would come in handy for those who have perhaps had one too many!

Coincidentally, that same day we discovered that it was actually International Rum Day! So we decided the best course of action would be, of course, to drink up some tasty rum! We had heard a lot about Stolen Rum, those cheeky New Zealanders across the Tasman, previously and were eager to try some out. Upon recommendation from our friend behind the bar, we were served up a delicious portion of Stolen Spiced Rum with Coke and Orange, known as a ‘Smoke and Coke’. The Stolen Spiced Rum was an experience I am hoping to repeat over and over. This rum blew my mind. Stolen incorporates fenugreek, vanilla beans as well as coffee beans which ultimately give this rum a delicious and dessert like flavour. Combined with Coke and topped with an orange slice this was the perfect way to serve this drink. Top stuff!

We got a little excited and told all our friends to order this beauty which resulted in it selling out. While this saddened me greatly, it gave us an opportunity to try out some more of what Bank Street Social had on offer. We also ordered some faithful and crowd pleasing gin and tonics. Always a winner in our books! We opted for two offerings from South Australia’s own Kangaroo Island Spirits, the KIS Old Tom Aged Gin and KIS Wild Gin. Bank Street Social feature an unbelivably wide selection of Australian spirits and beer. It’s great to see establishments like this supporting other locals, particularly when those locals make some damn fine booze. The Gentleman first made me aware of the Old Tom Aged Gin because I love gin and cats, and the label has both! The Old Tom makes a sweeter gin and tonic than usual, but it’s still damn fine sipping. These were another perfect choice for our classy night out. We love gin a lot. So, so much!

All in all, we had a grand time at Bank Street Social. Not only were we wowed by the delicious selection of fine local and international liquors on offer, but we were also impressed with the gorgeous decor and felt like proper socialites in Adelaide’s own social club.

We were going to name this drink after the classic Dark & Stormy but after doing a bit of research it turns out that only drinks made with Gosling’s Dark Rum can legally be called a Dark & Stormy and we didn’t want to get sued, we have no money. So we played around with the name a bit and after seeing how the drink looked we thought the Storm Cloud fitted it rather well. A nod to its inspiration that won’t get us sued.

60mL Santiago De Cuba Añejo Rum

2 scoops Rum and Ginger Ice cream

Bundaberg Ginger Beer to top the glass

The Ginger People Organic Ginger Syrup

Place one scoop of the ice cream in the glass. Pour your rum over the ice cream. Add a drizzle of the ginger syrup into the glass with the ice cream and rum. Top the glass to 3/4 full with ginger beer. Add a second scoop of ice cream and fill the rest of the glass with ginger beer. Drizzle with additional ginger syrup to decorate.

You may have noticed the Rum and Ginger ice cream listed in the recipe. Don’t panic, this is not some super involved ice cream with a million steps and ingredients. No, this is awesome cheats ice cream that can be made in a flash (or the time it takes to freeze a banana, twice, which is quick for ice cream). Going through my daily food blog routine I came across the rather intriguingly titled ‘How to Make Creamy Ice Cream With Just One Ingredient!‘ on The Kitchn. I was very curious because I love ice cream and I trust the good people at The Kitchn, especially after they showed me you could make whipped cream in a mason jar and I was able to whip up a batch in front of everyone when no one believed me. Boom! Anyway, apparently one ingredient banana ice cream is quite popular in health food circles, but it is never too late to catch onto something delicious. The best thing about it is you can add plenty of different flavours to your banana to help make it extra tasty, and not feel so bad because bananas are totally healthy and anything else you add is healthy by proxy right?

Rum and Ginger Ice-Cream

4 ripe bananas, frozen

8 tbs Bundaberg Ginger Beer

4 tbs Santiago De Cuba Añejo Rum

Make sure your bananas are really frozen. When they are super frozen remove the skin and chop them into slices. Add the slices to a food processor with your rum and ginger beer. I possibly added too much liquid to the ice cream but it still freezes and I was able to get out some rather ice cream looking scoops. Run the food processor until the banana has all been mashed up. When you freeze and then mash up bananas in a food processor they take on this unexpected but really creamy texture. It is that creamy texture that, when frozen again, becomes like ice cream due to the high pectin content in bananas.

I wasn’t sure how the ice cream would work as a float, given it was only banana, rum and ginger beer. When adding the ginger beer it didn’t froth up as much as normal ice cream would, but it did generate enough froth to remind you that you were drinking a float. It also had the creaminess you are looking for but without the overly sweet, sugary flavour that vanilla ice cream sometimes has. That absence of sweetness really allowed the spicy ginger flavour from both the ginger beer and the ice cream to come through. It was a really pleasant drink with the mixture of the ginger and the ice cream making it very refreshing and smooth with little trace of alcohol. On a hot summers day this would be so nice, maybe with a little party umbrella thrown in as well!

 

We may not be allowed to call it a Dark and Stormy but this combination of rum, ginger beer and one-ingredient ice cream is certainly tasty. Plus with the one-ingredient ice cream it is totally healthy so you don’t have to feel bad when you’re drinking it and guilt free indulging is always a good thing.
